Method

  1. Put kidney beans in a medium size pot and add beef broth.
  2. You can soak kidney beans in a bowl with water overnight if you need to cook within a couple hours.
  3. Add onion, bell pepper, celery, seasonings, and bay leaves to the pot.
  4. Cook bacon in a skillet separately (cut in small pieces); once cooked, add to beans.
  5. Cut up tasso in pieces and add to pot.
  6. Cook sausage separately (cut in pieces); once cooked, add to beans.
  7. Cook on medium heat and let boil.
  8. If you need more liquid while cooking, you can add water or more beef broth to get to the consistency you like.
  9. Keep stirring and add more seasoning if you like.
  10. Once done, cook rice and enjoy.
  11. Also good with corn bread.
